Pasta and Chicken
  • 2 cups pasta Any type of pasta works well, penne or fusilli are great choices.
  • 1 lb chicken breast, diced Can use pre-cooked rotisserie chicken to save time.
Cheese and Spinach
  • 2 cups fresh spinach Can substitute with thawed and drained frozen spinach.
  • 1 cup cream cheese For a smoother sauce.
  • 1 cup shredded mozzarella cheese Can add more for extra cheesiness.
  • 1/2 cup grated Parmesan cheese Great for topping.
Flavors
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil For cooking the chicken.
  • Salt and pepper to taste Adjust seasoning based on preference.

Method
 

Cooking Pasta
  1. Cook the pasta according to package instructions. Drain and set aside.
Cooking Chicken and Sauce
  1. In a large skillet, heat olive oil over medium heat. Add the diced chicken and cook until no longer pink.
  2. Add garlic and spinach to the skillet, cooking until the spinach is wilted.
  3. Reduce heat and stir in cream cheese until melted and combined.
  4. Add mozzarella and Parmesan cheese, mixing until smooth.
Combining
  1. Combine the cooked pasta with the sauce, stirring to coat.
  2. Season with salt and pepper to taste.
  3. Serve warm and enjoy!

Notes

Best served warm right after cooking. Pair with a simple green salad or garlic bread. Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 2 months.
