Ingredients
  

For the Sandwich
  • 2 slices slices of bread Use your favorite type of bread
  • 1 slice Fresh mozzarella cheese, sliced Use high-quality fresh mozzarella
  • 1 slice Tomato, sliced Use ripe tomatoes for the best flavor
  • a few Fresh basil leaves Add to taste
  • 2 tbsp Homemade pesto aioli (made with pesto and mayonnaise) Mix equal parts pesto and mayonnaise
  • to taste Salt and pepper Use to enhance flavors

Method
 

Preparation
  1. Prepare the pesto aioli by mixing equal parts pesto and mayonnaise until well combined.
  2. Toast the slices of bread until golden brown.
  3. Spread the pesto aioli on one side of each slice of bread.
  4. Layer the fresh mozzarella, tomato slices, and basil leaves on one slice of bread.
  5. Sprinkle with salt and pepper to taste.
  6. Top with the other slice of bread, pesto aioli side down.
  7. Press gently and serve immediately, or grill the sandwich for a warm version.

Notes

For best flavor, use fresh and high-quality ingredients. Optionally add red onion or balsamic glaze for tang. Store leftovers wrapped tightly and refrigerate for 1-2 days.
