Preparation
- Prepare the pesto aioli by mixing equal parts pesto and mayonnaise until well combined.
- Toast the slices of bread until golden brown.
- Spread the pesto aioli on one side of each slice of bread.
- Layer the fresh mozzarella, tomato slices, and basil leaves on one slice of bread.
- Sprinkle with salt and pepper to taste.
- Top with the other slice of bread, pesto aioli side down.
- Press gently and serve immediately, or grill the sandwich for a warm version.
Notes
For best flavor, use fresh and high-quality ingredients. Optionally add red onion or balsamic glaze for tang. Store leftovers wrapped tightly and refrigerate for 1-2 days.
