Preparation
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the eggs, one at a time, then stir in the vanilla.
- In another bowl, combine the flour, baking powder, and salt. Gradually add this to the creamed mixture alternately with the milk.
Baking
- Divide the batter between the prepared cake pans.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in pans for 10 minutes, then turn out onto wire racks to cool completely.
Notes
Make sure all ingredients are at room temperature for the best results. Do not overmix the batter, and allow the cake to cool completely before frosting. You can store the cake in an airtight container at room temperature for up to three days or refrigerate for up to a week. It can be frozen for up to three months.
