Ingredients
  

For the Crust
  • 1 cup Graham cracker crumbs Substitute with digestive biscuits for gluten-free.
  • 1/2 cup Unsalted butter, melted Can substitute with coconut oil for different flavor.
For the Cheesecake Filling
  • 24 oz Cream cheese, softened Use low-fat cream cheese for a lighter version.
  • 1 cup Granulated sugar Sweetens both filling and sauce.
  • 1/2 cup Sour cream Can replace with Greek yogurt.
  • 3 large Eggs Room temperature for easier mixing.
  • 1 tsp Vanilla extract Use pure vanilla for the best taste.
For the Bananas Foster Topping
  • 4 medium Bananas, sliced Use ripe bananas for best sweetness.
  • 1/2 cup Brown sugar Gives a rich, molasses flavor.
  • 2 tbsp Unsalted butter Melt in skillet for caramelizing.
  • 1/4 cup Rum Omit for an alcohol-free version.

Method
 

Prepare the Crust
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the graham cracker crumbs and melted butter until combined. Press this mixture firmly into the bottom of a springform pan.
Make the Cheesecake Filling
  1. In a large mixing bowl, beat the cream cheese and granulated sugar until smooth.
  2. Add the sour cream, vanilla extract, and eggs one at a time, mixing until just combined.
  3. Pour the filling over the crust, spreading evenly.
Bake the Cheesecake
  1. Bake in the preheated oven for about 50-60 minutes, or until the center is slightly jiggly but set.
  2. Allow to cool completely on a wire rack.
Prepare the Bananas Foster Topping
  1. In a skillet, melt the butter over medium heat. Add brown sugar and stir until dissolved.
  2. Slice bananas and add to skillet. Cook until caramelized, about 2-3 minutes. If using rum, carefully pour it in to flambé or let it bubble for a minute to cook off alcohol.
Assemble the Cheesecake
  1. Once the cheesecake has cooled, top it with the caramelized bananas.
  2. Refrigerate for at least 4 hours, or overnight for the best set.

Notes

Room temperature ingredients help avoid lumps. Bake in a water bath for a creamier cheesecake. Cool slowly to prevent cracks.
