Method
Prepare the Crust
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the graham cracker crumbs and melted butter until combined. Press this mixture firmly into the bottom of a springform pan.
Make the Cheesecake Filling
- In a large mixing bowl, beat the cream cheese and granulated sugar until smooth.
- Add the sour cream, vanilla extract, and eggs one at a time, mixing until just combined.
- Pour the filling over the crust, spreading evenly.
Bake the Cheesecake
- Bake in the preheated oven for about 50-60 minutes, or until the center is slightly jiggly but set.
- Allow to cool completely on a wire rack.
Prepare the Bananas Foster Topping
- In a skillet, melt the butter over medium heat. Add brown sugar and stir until dissolved.
- Slice bananas and add to skillet. Cook until caramelized, about 2-3 minutes. If using rum, carefully pour it in to flambé or let it bubble for a minute to cook off alcohol.
Assemble the Cheesecake
- Once the cheesecake has cooled, top it with the caramelized bananas.
- Refrigerate for at least 4 hours, or overnight for the best set.
Notes
Room temperature ingredients help avoid lumps. Bake in a water bath for a creamier cheesecake. Cool slowly to prevent cracks.
