Prepare the Batter
- In a medium mixing bowl, mash the ripe banana with a fork until mostly smooth. A few small lumps are perfectly fine.
- Add the milk, egg, maple syrup, and vanilla extract to the mashed banana. Whisk well until combined.
- Stir in the rolled oats, baking powder, ground cinnamon, and salt. Mix thoroughly until all ingredients are well incorporated and the oats are fully coated. If using, fold in half of your optional chocolate chips or chopped nuts now.
Air Fry and Serve
- Lightly grease your small oven-safe ramekin or baking dish. Pour the oat mixture into the prepared dish. Top with the remaining chocolate chips or nuts, if desired, and a couple of banana slices for a nice presentation.
- Preheat your air fryer to 350°F (175°C) for 3-5 minutes.
- Carefully place the ramekin into the air fryer basket. Cook for 20-25 minutes, or until the top is golden brown, set, and a toothpick inserted into the center comes out mostly clean.
- Once cooked, carefully remove the ramekin from the air fryer. Let it cool for 5 minutes before serving directly from the ramekin. Enjoy your warm and delicious banana bread baked oats!
Notes
This recipe is best enjoyed fresh from the air fryer. For meal prep, you can mix the dry ingredients ahead of time. You can also bake this in a conventional oven at 375°F (190°C) for 20-25 minutes. Feel free to adjust the sweetness to your liking. Add a scoop of protein powder for an extra boost of protein, reducing the milk by a tablespoon or two if the batter becomes too thick.
