  • 4 cups cooked rice Use day-old rice for best texture.
  • 4 slices bacon, chopped
  • 1 cup mixed vegetables (peas, carrots, corn) Can use frozen vegetables; thaw and drain excess water.
  • 2 medium eggs, beaten
  • 3 stalks green onions, sliced Garnish for serving.
  • 2 tablespoons soy sauce Use gluten-free soy sauce for gluten-free version.
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Method
 

Cooking
  1. In a large skillet, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the bacon drippings in the skillet.
  2. Add the mixed vegetables to the skillet and sauté for about 3-4 minutes until tender.
  3. Push the veggies to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until fully cooked.
  4. Add the cooked rice and crispy bacon back into the skillet. Pour in the soy sauce and sesame oil, and stir everything together until well combined.
  5. Cook for an additional 2-3 minutes, allowing the rice to heat through and absorb the flavors.
  6. Season with salt and pepper to taste, and stir in the green onions before serving.

Notes

Feel free to add garlic, ginger, or different vegetables based on preference. Make sure the skillet is hot enough before adding the rice to achieve a nice fried texture.
