Asparagus Puff Pastry Bundles

A delightful appetizer or side dish featuring tender asparagus, savory prosciutto, and melty Gruyere cheese wrapped in flaky puff pastry.

Ingredients
  

Main Ingredients
  • 1 bunch asparagus (about 12-16 ounces) (ends trimmed)
  • 1 tablespoon extra virgin olive oil
  • kosher salt kosher salt
  • pepper pepper
  • 2 sheets frozen puff pastry (thawed)
  • 8 ounces Gruyere (shredded)
  • 12 slices prosciutto
  • 1 egg beaten

Method
 

Preparation
  1. Preheat your oven to 425°F. Line a sheet pan with parchment paper.
  2. On a lightly floured surface, roll the puff pastry out to create a large rectangle about double its original size. Square off the edges and cut it into 6 squares.
  3. Toss the asparagus in olive oil and season with salt and pepper.
Assembly
  1. Place a slice of prosciutto on top of each square, folding it in half if necessary.
  2. Follow this with 3-4 stalks of asparagus and 1-2 tablespoons of Gruyere cheese.
  3. Lift two opposite corners of the puff pastry squares and wrap them around the asparagus. Press to seal the edges.
  4. Brush the puff pastry with the beaten egg, and sprinkle with additional salt and pepper if desired.
Baking
  1. Bake in the preheated oven until the puff pastry is golden and puffed, about 12-15 minutes.
  2. Serve immediately.

Notes

These bundles are best served warm right out of the oven. They can also be reheated in a preheated oven at 350°F for about 10 minutes.
