Preparation
- Preheat your oven to 425°F. Line a sheet pan with parchment paper.
- On a lightly floured surface, roll the puff pastry out to create a large rectangle about double its original size. Square off the edges and cut it into 6 squares.
- Toss the asparagus in olive oil and season with salt and pepper.
Assembly
- Place a slice of prosciutto on top of each square, folding it in half if necessary.
- Follow this with 3-4 stalks of asparagus and 1-2 tablespoons of Gruyere cheese.
- Lift two opposite corners of the puff pastry squares and wrap them around the asparagus. Press to seal the edges.
- Brush the puff pastry with the beaten egg, and sprinkle with additional salt and pepper if desired.
Baking
- Bake in the preheated oven until the puff pastry is golden and puffed, about 12-15 minutes.
- Serve immediately.
Notes
These bundles are best served warm right out of the oven. They can also be reheated in a preheated oven at 350°F for about 10 minutes.
