- Chop the chicken into bite-sized pieces. Dice the bell peppers and onion, and cut fresh pineapple into chunks.
- In a bowl, combine the chicken with soy sauce, honey, garlic, and ginger. Let it marinate for about 10 minutes.
Cooking
- Heat a large skillet or wok over medium-high heat and add a little oil. Once hot, add the chicken and cook until golden brown and cooked through, about 5–7 minutes. Remove the chicken and set aside.
- In the same skillet, add more oil if necessary. Toss in the onion and bell peppers, stirring until tender-crisp.
- Return the chicken to the skillet, add the pineapple chunks, and stir to combine everything.
- In a small bowl, mix cornstarch with a little water to create a slurry. Pour this into the skillet and stir until the sauce thickens, about 1–2 minutes.
