  • 1 lb Chicken breast or thighs For tender and juicy protein.
  • 1 cup Pineapple chunks Fresh pineapple is preferable.
  • 1 cup Bell peppers Any color; adds color and crunch.
  • 1 Onion Yellow or red onions work well.
Sauce Ingredients
  • 1 cup Soy sauce Tamari is a gluten-free substitute.
  • 2 tbsp Honey Maple syrup can be used as an alternative.
  • 2 cloves Garlic Minced; use garlic powder if in a hurry.
  • 1 tbsp Fresh ginger Adds warmth and spice.
  • 1 tbsp Cornstarch For thickening the sauce; arrowroot can also be used.
  • 2 green onions Green onions For garnishing.

Method
 

Preparation
  1. Chop the chicken into bite-sized pieces. Dice the bell peppers and onion, and cut fresh pineapple into chunks.
  2. In a bowl, combine the chicken with soy sauce, honey, garlic, and ginger. Let it marinate for about 10 minutes.
Cooking
  1. Heat a large skillet or wok over medium-high heat and add a little oil. Once hot, add the chicken and cook until golden brown and cooked through, about 5–7 minutes. Remove the chicken and set aside.
  2. In the same skillet, add more oil if necessary. Toss in the onion and bell peppers, stirring until tender-crisp.
  3. Return the chicken to the skillet, add the pineapple chunks, and stir to combine everything.
  4. In a small bowl, mix cornstarch with a little water to create a slurry. Pour this into the skillet and stir until the sauce thickens, about 1–2 minutes.

Notes

Cut chicken evenly for even cooking. Use fresh pineapple for the best flavor. Don't overcrowd the pan while cooking. Adjust sweetness to your preference, and feel free to add more veggies for extra nutrition.
