Ingredients
  

For the crust
  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
For the filling
  • 2 cups cream cheese Make sure at room temperature.
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
For the apple layer
  • 4 cups tart apples, peeled and sliced You can use Granny Smith or Honeycrisp.
  • 1 teaspoon cinnamon
For the topping
  • 1/2 cup rolled oats
  • 1/4 cup flour
  • 1/4 cup brown sugar
  • 1/4 cup butter For topping, softened.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. In a medium bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of the prepared pan.
  3. In a large bowl, beat the cream cheese, 1 cup brown sugar, and vanilla until smooth. Add eggs one at a time, beating well after each addition.
  4. Pour the cream cheese mixture over the crust.
  5. In another bowl, toss the sliced apples with cinnamon and place them on top of the cream cheese layer.
  6. For the topping, mix oats, flour, 1/4 cup brown sugar, and 1/4 cup butter until crumbly. Sprinkle it over the apples.
  7. Bake for about 60-70 minutes or until set and golden.
  8. Allow to cool before serving.

Notes

Best served chilled or at room temperature. You can slice it into wedges and serve it plain, or add a scoop of vanilla ice cream or whipped cream on top. A sprinkle of cinnamon or a drizzle of caramel sauce can also enhance the flavors. Store covered in the refrigerator for up to 5 days or freeze for up to 3 months.
